Less time in the kitchen for mums means more time to spend with the family. Its so important to enjoy those long summer days in the garden with the kids, as we all know they grow up far too fast.

We have come up with the best (and healthiest) ways to keep the kids full and happy. All recipes can be changed and substituted for any other ingredients if the kids have any specific preferences. And let the kids join in too, they will not only enjoy cooking with you, but they are also more likely to eat the results!

Healthy Pirates Fish Fingers:

Ingredients

Cod Fillets

Bread Crumbs

2 Eggs

Flour

1) Cut the Cod fillets into squares

2) Mix your eggs together into a bowl and dunk the cod fillets into the egg mix, leave the fillets to soak up the eggs for 2 minutes

3) Take your flour and breadcrumbs and mix two tablespoons of flour together and just dunk the fillets into the breadcrumbs and pop the lot into the oven to cook for around 20 minutes

 

A better way to get your kids involved is to take them to the fishmonger and let them choose the fish themselves.

Ingredients

Tuna

Bread

Salt and pepper

What makes a simple tuna sandwich something that kids will want to munch on for dinner? Cutting sandwiches into shapes of animals of course!

Space Rings

Ingredients

Squid

½ teaspoon of cayenne pepper

½ tsp salt

A pinch of plain flour

2 eggs

1) Cut your squid into rings

2) Beat your eggs and dip the squid into a bowl let the squid soak up the eggs for two minutes

3)Place all other ingredients into another bowl, dunk each piece of squid into the bowl to get a powdery finish to it and pop each piece into a frying pan for l 2-3 minutes until golden brown

4)Serve with tar-tar sauce

 

Summer Jungle Penne

Ingredients

Packet of Penne

1 tsp. Basil Oil

1 tsp. Olive Oil

3 cloves of garlic

1 pint of grape tomatoes

1 cup shredded pepperjack cheese

¼ cup of grated Parmesan cheese

1 tsp. fresh basil

Peas

Broccoli

 

1) Pop the penne in boiling water and leave for 7-10 minutes to cook

2) Heat Basil and olive oil in a large skillet on a low heat.
