Smashed Avocado + Mint with fresh Figs
Perfect for a light autumn evening! I love to make this as a quick and easy midweek meal, fresh figs and avocado create the perfect combination of sweet and savoury.
Figs are an amazing source of fibre and enriched in beautifying vitamins and minerals. Sounds good to me!
Here’s how I made it:
• 1 ripe avocado
• A handful of fresh mint leaves
• Juice of 1/2 a lime
• 1/4 tsp of chilli flakes
• Salt & pepper
Stone the avocado and put the flesh in a bowl, add the lime juice and chilli flakes. Very finely
chop up the mint leaves and add to the bowl, using a fork mash all of the ingredients together
until smooth. Season with salt & pepper. I topped my toast with the avocado & slices of fresh fig.
